Bringing in the New Year with Spicy Artichoke Dip

Hot. Easy. Delish. Am I describing your date for New Year’s Eve? No. I’m describing one of my most favorite dips on earth–Spicy Artichoke Dip. I’m brining him to a New Year’s Eve bash and you can too. Just follow the simple instructions and prepare to fall in love…or at least lust until your casserole dish is empty by Midnight. Enjoy!

What you will need:

artichoke supplies

  • 1 can (13.5 oz.) artichoke hearts, drained and chopped
  • 1 can (10 oz.) RO*TEL diced tomatoes and green chilies, excess liquid drained
  • 1/2 cup mayonnaise
  • 1/2 cup grated parmesan cheese
  • 1 teaspoon garlic powder
  • 1/2 teaspoon Worcestershire sauce
  • Tortilla chips

Note: I always double the recipe because I love it so much!

Instructions:

1. Pre-heat over to 375 degrees and spray pan with oil.

2. Drain artichokes.

3. Chop artichokes.

4. Combine all ingredients in a medium bowl.

5. Place in a casserole dish.

6. Bake at 375 degrees for 30 minutes or until hot and bubbly.

7. Let cool 10 minutes before serving. Serve with tortilla chips. Makes 2 1/2 cups of dip.
