
Strawberry, Goat Cheese and Arugula Sandwiches
School is out which means I’m surrounded by kids eating kid food. I saw this recipe at my local grocery store and thought it sounded wonderful. No hotdogs or mac and cheese for me. I’m going to make myself this sassy, sophisticated, easy sandwich instead. In fact, I might even get out of my work-out clothes and put on a dress. Happy grown-up eating!
What you will need:
For the vinaigrette:
- 2 Tb olive oil
- 2 tsp balsamic vinegar
- 1 tsp whole grain mustard
- 1 tsp honey
- Salt and pepper to taste
For the sandwiches:
- Goat cheese
- 4 english muffins (split and toasted)
- 1 cup arugula leaves
- 1 cup fresh sliced strawberries
- 2 -4 green onions sliced
Instructions:
1. For the vinaigrette, in a small bowl mix together the olive oil, balsamic vinegar, mustard, honey and salt and pepper.
2. Mix the arugula leaves, sliced strawberries and green onions into the vinaigrette. Toss to coat and set aside.
3. Toast your english muffins.
4. Spread goat cheese on each half of the muffins.
5. Top each muffin with the salad mixture.
6. Eat as open-faced sandwiches (makes 8) or as regular sandwiches (makes 4). Enjoy!
