Mexican Chicken Lime Soup
Do you need a little spice in your life? Are you feeling under the weather and need to clear out your sinuses? I have found the perfect soup to help warm you up on a cold, dreary winters evening–Mexican Chicken Lime Soup. If you don’t like spice, then you will not like this soup. In fact, it might be too darn spicy for your little guys, but your big guys will love it. You can find the original recipe {here} at Every Day with Rachel Ray. The adobo chipotle chile is what adds the heat and gives the soup a wonderful smokey flavor. I served my soup with a side of guacamole and tortilla chips.
What you will need:
- 2 tablespoons extra-virgin olive oil
- 1 onion, finely chopped
- 6 cloves garlic, thinly sliced
- 1 cooked rotisserie chicken de-boned and meat shredded
- 1 canned chipotle chile in adobo sauce, finely chopped, plus 2 tablespoons adobo sauce from the can {note: not the whole can, just one chile from the can, finely chopped–for spice wimps like me, I suggest using only half a chipotle chili}
- 6 cups chicken broth
- 1/2 cup chopped fresh cilantro
- Juice of 2 limes
- Salt and pepper
- 1 hass avocado, thinly sliced lengthwise into 12 pieces (optional–I didn’t add because I made guacamole instead)
- Crushed tortilla chips (garnish)
- Sliced black olives (garnish)
- Sour cream or shredded cheddar cheese (garnish)
Instructions:
- In a large saucepan, heat the olive oil over medium-high heat. Stir in the onion and garlic, lower the heat to medium and cook until the onion begins to brown, about 7 minutes.
- Increase the heat to high, push the vegetables to the side of the pan, add the chicken and cook, stirring, until chicken is warm, about 5 minutes.
- Stir in the chipotles and adobo sauce, then stir in the chicken broth. Lower the heat and simmer for 15 minutes, skimming any foam.
- Stir in the cilantro and lime juice; season with salt and pepper.
- Place 2 avocado slices in each of 6 soup bowls and pour in the soup.
- Top with the tortilla chips, sliced olives and sour cream or cheddar cheese.
