Bacon Cheeseburger Egg Rolls…Oh My!
What do you get when you cross bacon with a cheeseburger and an egg roll wrapper? You get a Bacon Cheeseburger Egg Roll, yumminess! These are not only kid-friendly, but adults think they are pretty swanky too. Serve them with ketchup and mustard condiments or make a batch using blue cheese instead of cheddar. Slice them and use for appetizers. Make them for slumber parties or a quick, fun weekday meal. Your family will love them. I promise. What you will need:
- 1 pound ground beef
- A1 Sauce
- Salt & Pepper
- bacon
- shredded cheddar cheese
- egg roll wrappers
- ketchup and mustard (optional)
Instructions:
1. Preheat oven to 350 degrees. Brown your ground beef in a sauté pan. Once my meat was browned, I added a few dashes of A1 sauce and salt and pepper for seasoning. Drain and set aside.
2. Cook your bacon. I made about 6 strips, but didn’t use them all. Somehow a couple of pieces of bacon were swiped out of my kitchen by starving, little boy beings :). You can use as much or little bacon as you would like.
3. Drain your bacon on a paper towel then crumble into your ground beef.
4. Lay one egg roll wrapper out like a diamond (not a square) and wet down the whole surface with water. I used a basting brush to do this. You don’t need to use very much water, just enough to help the wrapper stick to itself once rolled up.
5. Add a couple spoonfuls of the beef mixture along with some shredded cheddar cheese, from corner to corner.
6. Begin rolling the bottom corner and tucking it under the filling. Then bring in both sides and continue to roll.
7. Place on a sprayed cookie sheet. Cook at 350 degrees for 20 minutes or until wrappers start brown.
8. Serve with ketchup and mustard and a side of smiles.

Can these be done Ahead and froze?
I have no idea. I don’t see why not. If you do it, please let me know how they turn out. What an easy dinner/snack if you can do this, right?.
Arcticgirl and Becca – I make these all the time for the express purpose of freezing them. After baking them, cool thoroughly. Slide as many as you’d like into sandwich size Ziploc bags. Seal the bags, then store them in a gallon freezer Ziploc. To use, remove a bag and thaw in fridge. You can either reheat them uncovered in an oven/toaster oven until crispy or nuke them for 1 to 2 minutes in the microwave. Either way, they’re wonderful. As a side note, sometimes I’ll substitute flour tortillas for egg roll wrappers. Prep, baking, storage, and reheating is exactly the same.
